Follow Josh Pelham, Executive Chef of RACV Cape Schanck Resort, as he explores Mornington Peninsula’s incredible food & wine region, in pursuit to source fresh, seasonal, and local produce to create a delicious dish: Seared Snapper fillet with Macadamia Skordalia and Pickled Cucumber Salad, paired with Montalto Pinot Grigio Vintage 2018.
Josh visits three farmers, all of whom offer incredibly different fresh produce to the region.
Josh’s first stop is in Safety Beach at Peninsula Fresh Seafood, who have been providing fresh seafood for over 25 years ago and continues to withstand their original attention to quality and freshness, offering a select range of fresh locally caught whole fish, as well as popular shellfish.
Montalto in Red Hill South is next visited, with a strong focus on creating wines of exemplary quality and character, utilising winemaking techniques that complement the unique attributes reflected in each of their vineyard sites.
The final stop is at Tully’s Corner Produce Store, a site that was originally an apple orchard and now runs as a produce store, an Italian inspired café, and a stock feed centre. Tully’s pride themselves on empowering farmers and growers in the region and urge people to shop and support local.
Josh's journey along the Mornington Peninsula, and intimate interviews with each farmer, provides insight into behind the scenes at each of the farms, to create such an incredibly fresh and flavoursome Seared Snapper fillet Macadamia Skordalia and Pickled Cucumber Salad.
